Among the most sought-after canned foods in winter is green peas, without which many everyday and festive dishes can not do. To preserve green peas at home, you will not need many ingredients (with the calculation of one can of 0.5 l.):
- peeled young peas - 350 gr.;
- water;
- salt - 1 tsp;
- sugar - 2 tsp;
- table vinegar 9% - 1 tbsp. l
In case you buy peas in the market in pods: the consumption for a jar is 0.5 - 650 gr. peas.
We begin the process of preparation and preservation. We collect ripe peas from the garden or buy in the market. To him, while removing the overripe and spoiled. We wash it well from garbage.
Pour the washed peas into a saucepan, fill with water, bring to a boil over high heat and continue to simmer over small for 20 - 25 minutes. In this case, collect the foam (if formed).
After the time has passed, we remove the peas from the pan, using a slotted spoon (a large spoon with holes). We leave water for sterilization. We put it in clean and dry cans, lacking about one centimeter to the top. Then pour on top one teaspoon of salt and two - sugar. Add a tablespoon of vinegar, pour warm water and send to sterilize.
To sterilize, you need to take a large pan into which several jars will fit, cover the bottom with a towel (so that the jars do not jump and break when boiling) and put the cans covered with lids in it. Pour water (on the shoulders).
For sterilization, a temperature above boiling is necessary, so we add salt to it (1 tbsp. L will be enough).
Bring to a boil and continue cooking for no more than 20 minutes, depending on the maturity of the peas. If very young, then 15 minutes will be enough.
When ready, take out the cans, and roll up the lids. Be sure to check whether you rolled up well. To do this, turn the jar on its side and see if a pickle flows from it.
Everything is ready. Leave the canned peas to cool, turning it down with the lids.
